Marmalade and dried fruit cake

Makes a large 1-kg/2lb 4-oz loaf

100g/3½oz/¾ cup wholemeal flour

100g/3½oz/¾ cup plain flour

1 tsp baking powder

1 tsp ground cinnamon

1 tsp ground nutmeg

1 tsp ground ginger

a pinch of salt

250g/9oz/scant 2 cups mixed dried currants, cranberries and raisins

zest of 1 lemon

zest of 1 orange

150g/5¼oz butter, plus more for greasing

200g/7oz/1 cup + 2 tbsp golden caster sugar

2 eggs

100g/3½oz/⅓ cup orange marmalade

1 tbsp demerara sugar, for topping
